I wanted to get an electric smoker because I really don't have the time or patience to attend to a charcoal or propane smoker. This smoker uses an advanced light bulb to regulate heat. There is a sliding switch that increases the power to the bulb thus raising the temp. I found this a bit cumbersome because you cannot tell what the temperature will be so you have to guess and monitor, you cant mark the temps either because other factors will affect the heat element as well, such as the smoke damper open or closed and the outside temperature. So much for my lack of attention.



The best part of the smoker is the automated delivery of wood pucks that you have to buy, they are expensive but work wonderfully. Besides the wood pucks you don't have to worry about ashes floating up on to your meat. They get pushed into a bowl of water that you place into the smoker, which comes with the unit.



The company has a great online forum where you can ask questions and get quick answers from other owners, they share recipes and advice. My first 3 recipes where chicken, ribs and brisket. The chicken and ribs where very good and the brisket was ok. The issue was the operator, I just got to do a better job of temperature control, the temperature does stay steady once you dial it in.

I purchased the Bradley Smoker as a Christmas present for my husband. I believe he had hoped for a "bullet type" smoker becuase he thought an electric smoker was not going to provide the results he wanted. After using it once, my husband is addicted to smoking on this grill! Seriously. It truly is a "set and forget" type grill. Since opening the box 3 weeks ago, we have smoked ribs 3 times, a pork roast once, and the famous buffalo atomic turds that you read about on the Bradley Forums. Everthing we make is great. Take advantage of the Bradley Forums you can find on the internet. When my husband is not using the Bradley, he is on the forums learning from other people. This is a unit that can be taken with you anywhere. LOVE IT!

This unit really does a great job with providing a steady temperature all day long which you need to do real smoking. Anything with charcoal like the Weber another reviewer mentioned requires lots of attention. This device can run all day with a minimum of fuss. The digital temperature model is also nice although more money. The smoker wood pucks are about $15 for 50 or so and I rarely use more than 8 or 10 for a turkey or brisket.



Capacity is pretty generous. Again, not sure what the other reviewer was talking about. I've done 20+ lb turkeys, 2 12lb briskets, etc.



The only reason I didn't give this unit 5 stars is that the puck feeding mechanism can be finicky. If a lot of wood flakes or dirt get into the mechanism it can create problems with automatically feeding the pucks onto the smoking plate. That said, when my unit had that problem after a couple of years I found it straightforward to take the feeder apart and clean and lubricate where appropriate.



I store my unit outside year round and the optional cover makes that possible.

Not worth the money, There are othere units of similar style that are large and won't cause the headaches.



Limited capacity is another minus, cost of proprietary wood is quite expensive.



This thing is so bad that after 4 months I bit the bullet and purchased a Weber Smokey Mountain Cooker. Less than half the price and woeks every time.

I have a Weber grill with a smoker box. It's OK for giving a smoke flavor, but not really suited for serious smoking. For real smoking, this is it. Bradley's ingenious system produces great flavor with minimal attention. Since adding a Proportional/Integral/Derivative (PID) controller (see [...]), I've just set the temperature, loaded the smoker and generator, and walked away. I have yet to make anything bad in it and have used it almost every weekend since I've bought it.



As far as models, the Original Bradley Smoker (OBS) is OK but I prefer the stainless steel look (BSS). The digital models (DBS) have more control out of the box, but you can build or buy an external controller, such as the PID, if better temperature control is desired. Lots of people are happy with the simple slider in the OBS or BSS models. Whichever model you choose, you won't go wrong with a Bradley smoker.

Our first attempt with this item was a complete success. I smoked two pork tenderloins. It took about 30 minutes from start to finish and the meat was perfect. Since then we have smoked some salmon, cornich game hens, beef brisket, peppers, and onions. Everything turned out fine. I did find that I needed to "tweek" the smoking times a little to get the proper internal temperatures.

I was inspired to purchase the smoker after seeing excellent feedback about it on Amazon, and I thought it would be a handy kitchen addition to use on with a high-protein diet. It is very useful and imparts unique flavors to foods: Pork loin is wonderful! It's great for cooking meaty, rich, and savory "guy food" when you're feeding someone who wants to sink their teeth into a memorable bit of beast. It is easy to use and meats cook more quickly than I expected... make sure to follow the directions in the handbook. I look forward to using it to whip up an impressive meal for a dinner party soon. For smoky grilled meats my husband usually fires up our full-size old fashioned Weber grill with mesquite chips; which seems like a lot of work for just two of us so I was hoping the smoker would be a less-fussy alternative to grilling. I found, however, that the results of the smoker are completely different than grilling, so it really isn't a replacement but good in its own right. Though the smoked items don't have that crispy char quality that grilling can impart; the foods are moist, savory, and fragrant. And now the downsides: The sliding lid and the rim of the base have very sharp knife-like edges; and given how large and heavy it is, it's a little harrowing to handle while trying not to get hurt. I've painfully cut my fingers twice on the lid, deep enough to require bandages. The smoker's size is a little awkward and it takes up a lot of space so we need to store it in the basement when not in use. Also, the drip pan did warp after 2 uses (I saw mention of this in other reviews), but it has not at all altered the functionality of the smoker. All in all, I would recommend the smoker if you can find it on sale. It makes for a novel method of indoor food preparation, but I don't think I'd pay the full $65 retail price for it.

I use this smoker primarily for fish and it's also great for tofu and veggies. The only thing you'll need for perfect results is a kitchen timer- no guesswork, no fuss- you don't even need to turn the meat over! The smoker cooks/smokes fish in under 20 minutes and the results are sumptuous, tender and juicy. Solid stainless steel construction and easy cleanup, too! I find this model to be the perfect size if you're one, or a family.

I've had this smoker for about 6 months and these are my thoughts so far.



1. Salmon cooked in this smoker is unbelievably good. Without doubt the best fish I have ever tasted and if you cook nothing else in this unit it's worth the price for the salmon alone. Chicken, potatoes and ribs also great.



2. I first used it on my ceramic topped range indoors. I won't do that again. I am sure it caused damage to one of the heating rings on the range as a pinhole appeared in the ceramic top. There is a warning about that in the limited information sheet, but I ignored it - my own fault. Also (for me) too much smoke in the house. It took days for the smell to go away with all windows open and fans running. Maybe I used too much wood chips.



3. My suggestion is to use it on a barbecue outside. That's what I do. On a propane barbecue with the unit sitting on the grill, barbecue lid down, burners on high, it works great. Burners on low caused fish to cook too long and not be a moist in the center. I guess all barbecues give out different amounts of heat so yours might be different.



4. Buy extra wood chips (I like oak best) you will be cooking a lot of smoked food when you first buy this Cameron.



5. Buy the book "Smokin" by Chris Styler with the Cameron. It's a great book written specifically for the Cameron with cooking times and great tips.



6. Keeping the unit pristine clean is too much work. I wash in hot water and detergent then place in dishwasher. All my other cooking pots and fry pans I keep in new like condition but I quickly gave up on the Cameron. Now, after cleaning as best I can, I leave it out on the barbecue.

I've had this little smoker for a few years. Have made only salmon in it, but get rave reviews every time. I confess I bought mine at Sur la Table for the same price as Amazon. Like other reviewers have said, the finish is ruined after the first use unless you have the time, energy, and desire to scrub away at it. I don't. Won't smoke up your kitchen if you close the lid at the first wisp of smoke, keep the temp on the low side, and KEEP THE VENT RUNNING. Very important. Made a smoked salmon spread as an appetizer for Thanksgiving, and it was a huge hit. Simply defrosted a package of Trader Joe's wild salmon and popped it in the smoker unseasoned. Lots of questions from the guests about how I smoked it and where they too can find a stovetop smoker.

I bought the Cameron smoker about a year ago and I decided to break it out and try it. My first piece of salmon I Ever smoked was using cherry chips--it was fantastic!. Now I don't have to run to the specialty store for smoked lox anymore. I used Elder on my last 2 pieces I smoked the other day and again it come out great. I have adjust the temp from medium to low to get the right cooking time because I like mine a little under cooked. No more frying after this-- and as we can't BBQ in our apartment this is the perfect choice. I usually turn on the vents and open the front door for 15 minutes . Also can use foil to seal in the smoking . I give this five stars*****-- Brandi*

I was skeptical about smoking indoors, but after seeing Emeril doing it on his show one night, I just had to get one! I am a kitchen gadget and cookware collector, and I have to admit that I don't use a lot of them that often, but this smoker I will use quite often. I have done just salmon and it was awesome!! Next, chicken. It is easy to clean up. Yes, it discolors, but it is subjected to a lot of heat and smoke. Not a biggie. And yes, some smoke does waft out, but using the vent fan is just fine. I recommend this to anyone who loves smoked food. I love mine!

I have had this unit for a little over 2 years now and I have used it at least 50 or more times. It is very easy to set up. You have three "plugs". One is a chord that runs from the smoker box to the smoker. Then another plug that does the same. Finally you have the plug that powers the unit. Simple. Inside you find the bowl that holds water, obviously 6 racks, drip tray...normal stuff. Some people debate on this or the 4 rack version. Go bigger every time when it comes to bbq. You might say you would never use it but you are wrong. Every time I am invited to a get together I am always asked to smoke something. People buy the meat, I do the prep and the cooking. Just did 2 12lb turkeys on Sunday. By the way, 2 12lb turkeys fit perfectly. I have done 4 8lb pork shoulders as well. No problems.



Another nice thing about this smoker is the ability to cold smoke. Though some mods need to be done before you can do, or you need to live in a cold area, but cold smoking cheese is great. Every winter I smoke enough cheese to put WI to shame.



The instructions are easy to follow for the most part. I did months of research before I bought this so I was well prepared for what I was getting into. If you can't find the answer in the directions go to the bradley forum, those guys over there are the best at helping you out.



The negatives about this smoker, as one reviewer already pointed out, the temp is ungodly wrong. I bought a nice double, wireless, thermometer. Absolutely essential for smoking, no matter what smoker you have. This thing tells me what the temp of the smoker and the meat is, as well as alarms that I can set. So if my smoker drops to a very low temp, say below 100 degrees, an alarm will go off. This is good in case the unit becomes unplugged, or you and your buddies have had a few too many and forgot to reset the cooker timer. (By the way, 10 hours is plenty of time. No, meat is usually not done by then, but within 10 hours you are guaranteed to walk outside and check on your smoker at least once) The other problem I have with the temp is the lack of an extremely high temp. To get a good bark on a Boston butt sometimes requires a temp of over 300. That can be a problem with the bradley. Poultry skin comes out crispy either way, and shoulders are perfect, sometimes I just want a little more. Other than the temp, this thing is perfect.



I love this unit. If you have been using wood smokers, water smokers, vertical smokers, offset smokers, your old bbq as a smoker (which I have used all of these)....whatever, this unit will be a welcomed, headache free, addition.

I had just bought the four rack smoker and came to the realization that I should have bought the six rack. I like the idea of the digital smoker as I can set it and go away or to bed for that matter and not have to worry if I am over heating and burning food. I would say both units are good. but if you are only smoking once or twice a month the manual unit is fine but daily like I do spend the extra money

I just received this machine. I owned an original Bradley Smoker that gave up the ghost. When I saw the digital one for sale I thought that it would be more precise and a "set and forget" solution to smoking. I have tried it four times now and have discovered that the temperature variation on the unit is as much as 28 degrees over the set point and as much as 16 below the set point for a temp swing of 44 degrees. It turns out that Bradley has a forum for owners and those interested (look at their web site). Quite a number of new owners have been dismayed and disappointed in the temp swing on this unit. When I called Bradley they just said "that's the way it is with this unit" and told me it is similar to my house oven. I doubt that my home ever varies that much. The cycle time for this variation is 15-20 minutes so the food is never at the set point for very long. I don't recall swings like this with my old one.



If you look carefully at what you get for the hefty premium, it is not much. The basic unit has the automatic biscuit feed and when its out of biscuits there is no more smoke so the smoke timer on the new one means nothing. The timer on the cooking side has a time limit according to the Bradley owners so you can't leave it more than ten hours without going out and resetting it. The temperature control is not reliable so what do you get for the extra bucks. Not much to my way of thinking.



By the way, look at the photo carefully. This unit is not aluminum. It has a door that is painted an aluminum color and the body is black. I have to say that the fit and finish is very nice on the unit.



My advice is buy the original model and save yourself the extra bucks.

Cold smoker is a Bradley attachment that takes the place of cardboard boxes and many other configurations set up by Bradley Smoker users. Box is made from heavy steel and has convenient door for water tray. Connects well without much leaking to generator and cabinet. Included is a resistor that allows the generator to be disconnected from the cabinet when using the digital model. The hose (duct) could be a bit heavier. It is pretty fragile but does bend without any problem. You just need to be careful while bending or you'll kink it. Does not appear to be standard dryer vent hose. It's about 1/4" bigger to accommodate the end plates. I would give it five stars with a better duct.

Unfortunately, due to lack of system considerations,

the Cold Smoke Adapter as it is now, is not an acceptable product yet.

In order to set up the system workable,

we have to personally take troubles to

add a longer power line cord set and a platform to place the main tower or oven to match the heights. Further the aluminum duct provided is not

strong enough to bend or turn 90 degrees.
