I have owned a MECO Charcoal Water Smoker for over 10 years and wanted to replace it since the firebox and charcoal grate were wearing out from so many years of use. I used the smoker about once a week, 52 weeks a year for the 10 years I've owned it and it's held up very well.



What a complete dissapointment my new Stainless water smoker is!!! Instead of improving on the fantastic unit that I purchased so many years ago, the new "Upgraded" Stainless model I recently purchased was a total dissapointment! The "fire box" is simply the same as the water bowl...Hey, MECO, that's WAY TOO LIGHT a gauge of steel for a fire box. Also, it has no charcoal grate that the charcoal rests on. You just put the charcoal directly into the flimsy bowl [which is fine for holding the water....but no way will it hold up to contact with burning charcoal. I'm guessing it would burn through in a matter of months. Further, the firebox is no longer seperate from the body of the smoker, which was very convenient to start the charcoal or to take off the body while cooking to easily mess around with whatever you were cooking or refill the water bowl, add charcoal or whatever. Now, you'll be leaning right over the fire while you attempt to do any of these operations.....BAH!!!



Meco, what happened to your lovely, practical and reliable smoker??? WHO changed the wonderful design of your fantastic product to turn it into a mere shadow of it's former self??



You force me to look elsewhere to replace your formerly great product!

The pluses here are price and ease of assembly, even for me. The smoker has an outside heat guage that is convenient, if general: the settings are warm, ideal and hot. So, it's not a thermometer but useful enough.



Some negatives have to include cheesy material and insecure fittings that result in any number of leaky spots, even along seams. The smoker has a vent, but you don't really need it because of the ill fitting parts. My biggest complaint, though, is the material itself, because the thing is so lightweight that cooking in a stiff enough wind might be an invitation to a conflgration.



Ok, I guess, if you are an occasional enthusiast, but for those who are serious about outdoor cooking, skip this and step up and spend some money like I'm fixing to do.

I was unable to keep a constant temp because there is no damper on the lid. I had to use a stick to keep the lid open slightly. Took forever to cook ribs and chicken and they came out slightly dry because of no convection without the damper. Barrel section was dented also. Very cheap design, I would not recommend this item when there is so many better ones for a quarter of the price.

Overall the body of the smoker is structurally stable. However, when I was putting it together, I noticed the barrel was bent slightly and affects proper application of the lid. It is a very simple product to use, but requires attention to ensure the temperature remains stable.

If you're going to put out such a poor quality product it would be better if you just passed. Materials are as cheap as you can get. Top of smoker does not fit securely. No integrity to retain smoke in smoker.



The workmanship on this product is just awful. Really sucks!

I've used this as a grill and a smoker so far. It's okay as a grill. It works great as a charcoal smoker. I did a rack of spare ribs and they turned out tender with great flavor. Best ribs I've ever made. The only complaint is in how it arrived. The smoker body came out of the box slightly flattened on the sides even though there was no visible damage on the box. I used a rubber mallet to tap the body back into a circular shape before assembly, and everything fit together after that. If Amazon or Meco beefed up the box for shipping I would have no complaints. Otherwise, the smoker itself is a great value.

After several hours of searching and reading reviews of many different budget smokers I bought the Meco 5031. Easy enough to assemble. Kinda cheaply made, but it is a budget unit. I did check out the competition (under a $100) at the Big Box stores and they were cheaply made also. You get what you pay for! I have used this smoker once and it did a fairly good job. The Pulled Pork tasted great,was tender and moist. I did find it difficult to regulate the heat with the vents in the lid of the unit. Could best control in side heat by adding small chunks of lump coal at a time and leaving the top vents wide open. Hopefully with more practice I'll get this part down better. So, if your on a very tight budget this will get the job done with a little bit of babysitting. If your budget will allow, and you like quality built items,maybe spend the $200 to $300 for a better unit.

The Meco smoker has really won our family, this is the second one we have purchased. We have tried other smokers but none other is as consistent with preparing food quality, it is always cooked evenly and throughly. The price is pretty amazing also, we got a extra 30 dollars off for registering with Amazon Visa, so we got it for 46 instead of 76. I do highly recommend this product...if you, enjoy great food!

Bought this smoker for my son for Christmas. First of all, it arrived about a week before I expected it, which was great. My son has already used it 3 times since Christmas and is just delighted with the results. He says it cooks faster than he expected, but the flavor and juiciness of the meat is terrific. The size is fine too - he has cooked ribs and sausage for 6, and also a whole large chicken. He has already recommended this smoker to a couple of his friends!

If I had been able to see one of these smokers in the store I would not have bought it. It seems poorly made and doesn't fit together very well. But since I bought it and went to the trouble of putting it together, we gave it a try. It works! We've used it every weekend since we got it - ham, chicken, sausage - everything is great. I don't know how long this thing is going to last, but I'm going to use it until it falls apart - then buy something else.

I agree with most of the criticisms already stated. It is literally impossible to add additional coals. Also, the grate/water pan supports are garbage -- difficult to place the bowl with the fire hot, and then it will frequently tip. Maybe my technique isnt perfect, but I have had only two successful uses of this thing. I may make additional changes, e.g. removing one grate and mounting the water bowl higher. Maybe that will open up an area to load coals more easily. In addition, my father has a two-piece smoker that lifts to add the coals -- FAR better for the same price. AVOID this smoker, IMO.

I recommend reading Chris Cox's review of this product.



[another manufacturer] had a similar version that actually came with nesting fire bowls that allowed plenty of air flow through the fire, and allowed enough ashes to drop out that ash wasn't a problem until about the 6th hour of fire time. It was otherwise the same as this smoker, and those fire bowls made that smoker better.



This is a smoker, not a bar-b-que, so it's designed to run cooler and longer than a BBQ. Even still, without proper aspiration, this smoker runs too cool on the average.



I ended up getting a "bar-b-q wok" - a perforated plain steel bowl- like a colander with big holes - with handles - and I use this as a fire grate in the fire bowl. I put 3 small rocks in the bottom of the ash bowl and set this "wok" thing on top; the wok is about the same size as the ash bowl and "nests" perfectly, the without the rocks the ashes wouldn't fall through the holes.



Doing it this way, I can load this thing up and maintain the fire (add a few chunks of hickory or mesquite) for 8 hours and cook a feast with no problems (typ: 8 ears corn, 1 6 to 8 lb rib roast, 8 or 12 chicken thighs, etc, all in one 8-hour smoking session).



Without doing something about the fire bowl, it will never burn fuel evenly or completely.



It's one of the few wood or charcoal fire based smokers with a water bowl to regulate temperature and moisture. They should bring back the older fire bowl design, and it will be perfect.

This is a great smoker. However, you need two 8' x 8' burlap squares to place over smoker to retain and regulate heat. You also need a magnetic surface thermometer to place on top of lid. Keep surface thermometer at 170 - 200 F. Poultry will take 35 minutes / pound and will be done perfectly.

After gaining an appreciation for smoked meats at a local fair, I talked the wife into letting me try it at home, and went looking for a smoker to compliment my gas grill. I chose the Char-broil H2O smoker for the price and ease of storage. The first time using it, I had the fore sight to read these reviews to see where others had problems. I chose to use lump charcoal, and hickory wood. I could only get the unit to heat up to 190 degrees, but it stayed steady. A buddy is a Black Smith, I remember him using a bellows to stoke his coal fire. Using the wifes hair dryer the coals glowed cherry red and the temps got up in the mid 200's. To replenish the water, a long funnel from the auto parts store was purchased. This worked out great, and didn't cause any water to spill onto the fire pan. My first try I was able to make some tasty ribs in 5 hours time. Low and slow is the smokers way.



A couple of weeks ago, I ordered an electric element for the cooker from Cabela's website. It fit perfect,and allowed me to slow cook the brisket at about 210 degrees. The size of this units grates can accommodate about a 10# brisket. The air temperature that day was in the low 20's. I didn't think I would like the electric aspect, but I'm sold on it now. Using soaked cherry wood chip to flavor the meat replaced the charcoal completely which allowed me to set it up and let it go for 11 hours. Checking and refilling the water pan half way through.



The smoker worked wonderful, and exactly as it was design too. Since buying this unit I've looked at the Brinkmann, Weber's and others of similar design. The Char-Broil's access door handle is larger and easier to open with cooking gloves on. It also has a top mounted temp gage, where Brinkmann is on the side of the lid. The bright red color is pleasing to the eye, and keeps the kids at a distance. Using the second great for smoking is ok, but most of the heat will be in the dome, so know your cooking times. Smoking makes a mess, be sure to put down cardboard or a disposable tarp under the cooker, you'll see what I mean after your first brisket.



Find a Rub that suites your taste, give yourself plenty of time to do it right, then sit back and watch the neighbors flock when they smell the morsels you'll be creating inside this little cooker. Get to know its limitations and you will not be disappointed. The only regret I have is it's not larger. A small family will find it perfect! I love this little smoker!

I actually didnt purchase this smoker, luckily, but I borrowed it from a friend to try out. I've had about 10 successful smokes on it, but it is not as easy as it should be. In order to even get the thermometer to read in the ideal range, I've found that not filling the water pan at all is the key. Otherwise it gets stuck on the cool/ideal line. My smokes have taken 3-4 hours longer then expected due to the ashes choking the fire out. I would have to stir the coals and knock ash off every 30 min to retain a decent temperature. As soon as I have the money, I will buy the Weber Smokey Mountain and give this smoker back to my friend.
